30 Days of Egg Whites: Cauliflower, Egg White, Cheese and Bacon Scramble

Volume eating made easy. Today we’re going to create a base with simple ingredients that maximizes both the volume of our food and our macro buck.

Ingredients
  • 200g cauliflower
  • 250g egg whites
  • 50g back bacon
  • 15g mozzarella
  • 10g onion
  • 100g zucchini
  • 2 cloves of garlic
  • Salsa, goats cheese and spices to taste. I used salt, pepper, garlic salt and onion powder.
Method
  1. Preheat a pan on a medium heat
  2. Cut cauliflower into small florets and place in microwave safe dish. Add a splash of water and microwave for approximately 3 minutes or until florets are soft yet slightly firm
  3. Whilst cauliflower is cooking; in the pan, add bacon, onion, zucchini, garlic, onion powder, salt and pepper.
  4. Remove cauliflower from microwave and drain any excess water. Add to pan with all other ingredients. Stir fry together until all ingredients are to desired softness, and bacon at desired crisp. Pour in egg whites and allow them to set slightly before beginning to scramble.
  5. Add in mozzarella cheese combine until melted. Remove from heat and place in a bowl. For this dish I sprinkled goat’s cheese and salsa to taste on top.
