  • 24oz Salmon (6 4-ounce fillets)
  • 300g cherry tomatoes (~one pint)
  • 2tbsp parsley
  • 2tbsp capers (can be omitted if you don't have or like capers!)
  • 3 cloves of garlic (~3g each)
  • 40lm lemon juice (juice from one medium lemon)
  • 150g sweet onion (~1 medium onion)
  • 2tsp olive oil
  • Salt and pepper to taste
  • Tin foil

Note: The srving size is one salmon fillet with toppings! This recipe includes instructions for both grilling and baking.

This recipe may look and taste fancy, but it takes under 10 minutes to throw together. With healthy fats, plenty of protein, and an added fiber kick, this takes baked salmon up a level—both for taste and health.

 

Instructions

  1. Preheat the oven to 400 degrees
  2. Create a loose pockets for each salmon fillet with tin foil
  3. Salt and pepper each salmon fillet and add to tin foil pocket
  4. Quarter tomatoes, finely chop parsley, and thinly slice onion
  5. Add to bowl with olive oil, lemon juice, capers, and pressed garlic
  6. Mix well and evenly distribute over salmon fillets
  7. Bake for 20-40 minutes (until salmon is opaque and flakey—cook time will depend on oven and rack height)
  8. Alternatively, you can cook salmon on the grill for 10-15 minutes
