Burger Bowls

Who doesn’t love a good burger?! Sometimes I want all the flavors of my favorite burger but don’t want to have to take a nap after I eat it, so I really enjoy removing the bun (and the extra grease) and building these lightened up burger bowls instead.

This recipe allows you to add all your favorite toppings, get more nutrients and fiber in, and do it as a meal prep item that you can enjoy a few days in a row.

To build your bowl, start with the lettuce on the bottom, then add the seasoned beef and all the toppings you like. Feel free to add any extras I did not list in my recipe, like cheese, bacon bits, even a poached egg. Drizzle the burger sauce over the top to complete -- this really ties it all together so don't leave it out!

I like storing all my components separately in the fridge so I can build my bowls for lunch or dinner a few days in a row.

Instructions

  1. Add ground beef to a large nonstick skillet on medium heat along with 1/2 teaspoon each of salt, garlic powder, onion powder, and paprika and brown, about 8-10 minutes.
  2. Wash your sweet potatoes and then cut, skin on, into quarters, then into strips to make fries.
  3. Toss in a bowl with the avocado oil and season with salt.
  4. Air fry at 350 degrees for 15-20 minutes, tossing halfway. They should start to crisp up and brown. You can turn up heat for the last 5 minutes to 375 if needed. For best results do not overcrowd the air fryer, and do in two batches!
  5. For the burger sauce, mix mayonnaise, greek yogurt, ketchup, mustard, pickle juice and remaining seasonings in a small container with a lid.
  6. To build your bowl start with the lettuce on the bottom, then add the seasoned beef, and all the toppings you like.
