- 10 pitted Medjool Dates (about 25g each)
- 70 crunchy peanut butter
- 100g dark chocolate chips or a chocolate bar chopped (I use Enjoy Life or Hu Chocolate gems)
- Sea Salt (I use Maldon Flakey Sea Salt)
When I started eating healthier and was working away from excess refined sugars, this was one of my favorite sweet treats after dinner. It’s been a staple in my home for almost eight years now!
These healthy, frozen stuffed chocolate dates are simple to make, only require four ingredients, and can be stored and eaten right from the freezer. The chocolate, peanut butter, and salt combo is tough to beat, and one or two dates are plenty to leave you feeling satisfied.
Recipe Notes:
*You can weigh the remaining chocolate to deduct the amount from your recipe. I only used 50g of chocolate, which I put into the recipe to get the macros. The rest can be saved for something else, like coating bananas or an ice cream topping! Just store it in the fridge and reheat it when you are ready to use it.
**If you do not have crunchy peanut butter use any kind of creamy nut butter and then add nuts on top of the butter before coating the dates in chocolate.

Instructions
- Take each date and make a small slit on the top, being careful not to slice clear through. Remove and discard the pits.
- Add 7g of crunchy peanut butter to the inside of each date and squeeze closed.
- Add your chocolate chips to a small microwave-safe bowl. Microwave in 30-second bursts, stirring in between each burst, until fully melted. Doing it in bursts prevents burning the chocolate.
- Take a skewer or toothpick and insert it into a date. Dip into the chocolate mixture and turn to coat all sides. Let any excess drip off. Add to a freezer-safe plate and repeat until all the dates are coated.*
- Sprinkle a pinch of flaky sea salt on each date while warm so it will stick.
- Place in the freezer at least 1 hour to harden, then they are ready to eat.
- To store, place frozen dates in an airtight container and keep in the freezer.
