Marry Me chicken is one of my favorite meals, so I thought I would do a spin on that using the same ingredients and make a high protein pasta with the sauce instead!
It’s full of Italian flavors and with fresh tomatoes in season right now it seemed like a great summer dish that could be enjoyed hot or cold. I will eat this cold out of the fridge but it can easily be reheated.
Add one of my Air Fryer chicken thighs to the top and you’ve got a complete meal!
Instructions
- Start cooking your pasta per the instructions on the box. Save 1 cup of the pasta water to use later, drain the rest and set the pasta aside.
- In a large skillet over medium heat add olive oil, garlic and onions and saute for 2 minutes until soft.
- Add all your spices, the cherry tomatoes, tomato paste and sun dried tomatoes and stir well. Saute for 5 minutes.
- Turn heat down to medium low and add in the cup of pasta water and the milk/heavy cream. Cook until the tomatoes burst and you get a nice sauce. This takes 5-8 more minutes.
- Add your spinach and stir in until wilted.
- Add your cooked pasta and stir until well coated with the sauce.
- Grate some fresh parmesan cheese over the top to finish and serve!
